What to do with ... OYSTERS!

Oysters Rockefeller || Oyster Stew || Oyster Dressing



Oysters Rockefeller
Yield = 6 servings

Ingredients
36 Florida oysters, shucked, in the half shell

rock salt
2 cups spinach, cooked and drained
1/4 cup onion, chopped
2 fresh bay leaves
2 tablespoons Florida celery, chopped
1 teaspoon Florida parsley, chopped
1/2 teaspoon salt
1/4 teaspoon hot pepper sauce
1/3 cup butter
1/2 cup dry breadcrumbs
1 tablespoon Florida lemon juice

Preparation
Preheat oven to 400 degrees F. Arrange oysters in shells on rock salt in a baking dish. Process spinach, onion, bay leaves, celery, parsley and seasonings in a food processor until smooth. In a saucepan, cook spinach mixture in butter for 5 minutes. Add breadcrumbs and lemon juice, mixing well. Spoon the spinach mixture on top of oysters and bake at 400 degrees F until oyster edges curl.

6 servings.

Oysters Rockefeller || Oyster Stew || Oyster Dressing


Oyster Stew
Yield = 4 servings

Ingredients
1 pint Florida oysters with liquor
1/2
cup Florida onion, finely chopped
1/2 cup Florida celery, finely chopped
1 stick butter
1
quart whole milk (use part half-and-half for richer stew)

seasoned salt to taste

pepper to taste

celery salt to taste

Preparation
Drain the oysters, saving the liquor. Remove any shell particles. In a large saucepan, sauté the onion and celery in 2 tablespoons of the butter until very soft and transparent. Add the milk and the remaining butter. Heat the milk, but do not boil. Add the oyster liquor, salt, pepper, and celery salt. In a separate pan, heat the oysters for 2 minutes or more, just until they curl at the edges. Add the oysters to the stew just before serving.

Oyster Dressing
Yield = 5 cups

Ingredients
1 12-ounce container Florida oysters
1/2
cup Florida celery, chopped
1/2 cup Florida onion, chopped
1/4 cup butter
4
cups day-old bread cubes
1
tablespoon fresh Florida parsley, chopped
1 teaspoon sage
1/2 teaspoon salt
1/8 teaspoon poultry seasoning
1/8 teaspoon pepper

Preparation
Preheat oven to 325 degrees F. Drain oysters; reserve liquor. Remove any remaining shell particles. Chop oysters. Cook celery and onion in butter until tender. Add oysters and oyster liquor to vegetables; cook for 10 minutes. Combine oysters, cooked vegetables, bread cubes and seasonings in a large bowl; mix thoroughly. If stuffing seems dry, moisten with additional oyster liquor. Bake dressing in a greased casserole for 30 minutes or use for poultry stuffing.

Yield
Stuffing for a 4-pound ready-to-cook bird, or 5 cups.

Stuffing for poultry
For 5-9 pound bird ....... 2 times stuffing recipe
For 10-15 pound bird ... 3 times stuffing recipe
For 16-20 pound bird
... 4 times stuffing recipe
For 21-25 pound bird
... 5 times stuffing recipe
